Type and time of maceration of the skins: crusher-stemmer, lowtemperature skin fermentation 5/8°C, soft crushing and control of the must fermentation temperature in small French oak casks stored in air-conditioned rooms

Refinement: 18 months on the yeast in the oak casks used for fermentation. 6 months in bottle
