HEDOS 2005 IN THE 2006 EDITION OF ITALIAN ROSE WINES

Montepulciano d'Abruzzo Cerasuolo Hedòs 2005 is one of the 23 Italian rosè wines that simply have to be tried according to the new guide “Rosè wines of Italy - drinking rosè is cool 365 days a year”, published recently by the Cucina e Vini Editrice.

The guide includes all the best Italian rosè wines, classifying them according to the region in which they are produced and their denomination of origin: there are 320 altogether of which 23 have been judged to be of superior quality.

One of these prestigious 23 is Cantina Tollo's Hedòs 2005.
Hedòs has a strong link with its territory of origin and is obtained after a short period of fermentation in contact with the grape skins, a process which gives it its typical full-bodied cherry colour (cerasa from which the name cerasuolo is derived), a fruity bouquet of cherries and wild cherries and a soft dry balanced delicate taste with an almondy aftertaste.

Hedòs is made from 100% Montepulciano grapes, harvested manually during a slightly advanced phase of maturation. After soft pressing, the must remains in contact with the the skins for about 12 hours.
In this way the grapes are exploited to the full for the bouquet and structure of the future wine.

After a period of fermentation of about two weeks, the wine is kept in recipients at a controlled temperature.

The wine obtained from this process has an intense red colour with faint shades of violet, a mature fruity bouquet with a hint of spices and a persistent full-bodied taste with a delicate aftertaste of almonds and spices.
